With the EVOX retarder provers you can have a controlled proving, constant temperature and maintenance cycles, by acting on the setting of 4 parameters: temperature, humidity, duration and ventilation.
EVOX RETARDER-PROVING CELLS, CABINETS AND COUNTERS
. In the production of leavened products (bread, croissants, focaccia, pizza), time, temperature, , humidity and air circulation are the aspects that determine the success of a product. With the use of an EVOX retarder prover by SINOFCOLD, it is possible to precisely determine the temperature, the percentage of steam, the internal ventilation and the duration of the various phases of a fermalivitation cycle, allowing production processes to be standardized guaranteeing a constant product over time without being affected by the seasons.
You will be able to choose between 3 cell models, 1, 2 or 4 EN 60 x 80 trolleys (bespoke models on request)2 cabinet models, for EN 60 x 40 or EN 60 x 80 trays, and three under-counter models, 2, 3, 4 doors. To complete the range, the possibility to choose between the -5°C / +35°C (N) or -18°C / +35°C (B) versions.
